Add the sugar, lemon juice, almond extract and tapioca to the cherry's. Make the crust. Add the cherry's to the crust & put the crust top on. Make egg wash with 1 Tablespoon water or milk and the egg white and brush over top crust. Sprinkle on coarse raw sugar. Preheat oven to 425o F with pizza stone on lower rack. Place pie in middle rack. Bake for 15 minutes then reduce temp to 350o F and cook additional 35 to 45 minutes.
Optional: Let the cherry's set for an hour or so and drain out the juice. Start the juice boiling and reduce to ⅓. After the juice has been reduced, add the juice to the cherries and mix together by hand and then add to the pie shell.
